À l’Andalouse is a French expression for a side garnish on a plate accompanying a main dish.
It refers to Andalusia, in southern Spain. Andalusia is known for the quality of its tomatoes, so the garnish will include tomatoes, either in cooked pieces or in a sauce.
Other components of the garnish may include:

- rice;
- chipolata or chorizo sausage;
- fried eggplant.
The one thing you can count on, though, is the presence of tomatoes.
