À l’Argenteuil

À l’Argenteuil is a French expression for a dish accompanied by asparagus as a side garnish.

Lamb Argenteuil is lamb with asparagus.

Language Notes

Argenteuil is a region in the Seine-et-Oise area of northern France, 11 km northwest of Paris on the Seine.

It used to be a popular destination for day-trippers from Paris. It is now known more for the quality of the asparagus grown there.

The growers in Argenteuil developed a technique of growing asparagus underground to make it white.

The name of the area itself, Argenteuil, comes from “argent”, meaning “silver”, referring to the silver that was mined there a few thousand years ago.
