À la Beauvilliers is a French cooking term used to describe a side garnish on a plate.
The garnish consists of:
- round slices of salsify browned in butter;
- small tomatoes that have been stuffed with brain and then sprinkled with breadcrumbs;
- spinach crepes that are rolled up, cut into small pieces, battered and deep fried.
