À la Brillat-Savarin

À la Brillat-Savarin refers to puréed potatoes made into hollowed nests that are fried, then in the hollow is placed a thick sauce made from foie gras and truffles. It is usually served with meat such as game or lamb noissettes.

Alternatively, à la Brillat-Savarin can be a garnish that includes asparagus tips to accompany soft-boiled eggs.
