Carte is the French word for a menu.
À la Carte means you pick the separate items you want from the menu.
They will each be priced differently, and your bill is the sum of what you picked.
The opposite of this would be “prix fixe”, where all the items of a meal are set, and there’s a set price, or a meal such as that organized for a group, where everyone gets the same thing.
