À la Doria: has two possible meanings.
One is a garnish for fish made of cucumber and lemon. You peel the cucumber, and scoop out small balls of it. You soften the balls for 10 minutes over low heat in butter. Meanwhile you peel the lemon and cut it into very thin slices. You lay the peeled lemon slices on the fish, garnishing around with the cucumber balls.
Alternatively, it can be an allusion to the Doria family of Genoa, Italy. Dishes with the name will pick up the Italian theme somehow, either by using the colours of the Italian flag (green, red, white), or Italian truffles. Some example dishes in this vein are Bombe Doria, Chicken Doria and Doria Salad.
