À la Forestière is a French cooking term used to indicate a side garnish of morels and potato balls (some say diced potatoes) sautéed in butter. Occasionally the mixture also includes diced, sautéed salt pork.
Sometimes it indicates a simpler garnish just of wild mushrooms.
Either is used as a garnish for smaller cuts of meat and fowl.
