There are varying interpretations as to what “À la Milanaise” means.
- a thick veal stock flavoured with tomatoes, then strips of ham, pickled tongue, mushrooms and truffles mixed in, and served with pasta;
- cooked ham in moulds;
- pasta gnochi (the non-potato kind) covered in parmesan and then grilled; or
- with butter, parmesan and a fried egg.
