À la Moissonneuse is a garnish of shredded lettuce, potato and peas to accompany meat.
Cooking Tips
1 ½ tablespoons (20g) butter
1 ½ tablespoons (20g) flour
1 head lettuce
2 oz (70g) thinly sliced bacon
10 oz (300g) potatoes
10 oz (300g) peas
Make beurre manié by kneading the flour and the butter together. Set aside.
Wash the lettuce, and juliënne it. Set aside.
Dice the bacon; set aside.
Peel the potatoes and cut into slices.
Cook everything together, except the beurre manié, in some salted water, drain, and then toss with the beurre manié.
