Classically, means a garnish with quenelles of chicken, rooster combs and kidneys, offal from lamb or calf, mushrooms and truffles. These items are cooked separately and arranged separately on the plate.
It appears that it is also being used to mean “with walnuts”: “aillade à la Toulousaine” is aioli with ground walnuts.
