The 28th of January is Blueberry Pancake Day.
This is a day to celebrate pancakes with blueberries in them.
The blueberries used may be fresh or frozen. Some are made with wild blueberries.
You could try making some today; certainly many websites and magazines will be offering recipes for today.
You could also treat yourself to some at a restaurant that is serving them today. Some restaurants may offer huge, oversize blueberry pancakes as part of a promotion for the day.
At some places, there will be blueberry pancake making contests, as well as blueberry pancake eating contests to see who can eat the most.
Some of these contests, or breakfasts, may be held to raise money for a given cause.

History
The first print mention that CooksInfo is aware of for a Blueberry Pancake Day in January occurred in January 2015 in Texas:
“Deschenes includes some recipes, but not one for every ‘holiday’. I was especially distraught that she offered none for the upcoming National Blueberry Pancake Day on Jan. 28, a day I personally plan to celebrate in style. I offer my own recipe, which includes pecans, and could also be used to celebrate National Pecan Day on March 25.” [1]Calta, Marialisa. 365 reasons to celebrate. Seguin, Texas: Seguin Gazette. 15 January 2015. Page 2, col. 2.
Prior to this, we found mentions from various organizations in the U.S. advertising Blueberry Pancake Days in the summers, when blueberries were seasonally available.
