The salads are chilled before serving to develop and meld flavours, and to keep at a safe temperature.
While most men at a picnic or buffet table will drift on by the bowls of tossed green salads, they will stop and fill up their plates from the bowls of Bound Salads. A chilled pasta salad, tossed with olive oil, probably doesn’t pass as a Bound Salad, though upon seeing carbohydrates men will still empty that bowl, anyway.
Tuna salad, potato salad, macaroni salad, seafood salads and chicken salad are examples of bound salads.
If you are making a Bound Salad that is going to sit out for a while, such as at a picnic or church supper, you are actually better off in terms of people’s health to use a bottled mayonnaise rather than making your own (bless you for thinking of it, anyway), as the bottled stuff, with its preservatives, may not go bad as fast as the homemade.
