Brittany Butter Cookies are rich, crumbly shortbread-like cookies based on butter made in Brittany, France.
The base ingredients are flour, butter, eggs, sugar, salt. The cookies are round, and sometimes have fluted edges. The tops are brushed with an egg wash to glaze them.
The cookies are crisp to bite, and are crisp for first few chews. Then, they melt all of a sudden and the richness explodes in your mouth.
A well known-brand is Jos Perron, made in Coray, Brittany, France since 1916. (The Jos Perron brand does not have the fluted edges.)
Language Notes
Brittany Butter Cookies are sometimes called Breton “sand cookies”, aka Sablés , aka Biscuits de Bretagne, aka French Butter Cookies.
