Buckwheat noodles are grey to dark brown noodles made from buckwheat flour.
They have a slightly chewy texture when cooked, and a more earthy flavour than wheat noodles.
The best known type of buckwheat noodles are Japanese Soba Noodles, which are actually made from a mixture of buckwheat and wheat flours.
Cooking Tips
Fresh thin noodles take 2 minutes to cook; fresh wider ones take 3 minutes.
If serving cold, boil, drain, rinse in cold water. If serving later, toss with oil so they won’t stick together. Rinse the oil off with cold water and drain before serving.
