Byland Blue Cheese

Byland Blue Cheese is a firm, but creamy and crumbly blue cheese with greenish-blue veins.

It has a somewhat sharp, spicy taste.

It is made in 1.5 kg (3 ⅓ pound) wheels, and sold in pieces wrapped in foil.

History Notes

Byland Blue was created by Judy Bell of Shepherds Purse Cheeses in Thirsk, Yorkshire in 2002, after researching methods used by the Cistercian Monks at Byland Abbey, near Coxwold, North Yorkshire.
