Cenovis

Cenovis is a dark brown commercial seasoning mix with a strong smell and a salty taste.

Like Marmite or Vegemite, it is a yeast extract, made from brewer’s yeast, “plant extracts”, and sea salt. It has a slightly clearer, and slightly smoother taste than Marmite, but as for Marmite or Vegemite, people either love it or hate it.

It comes in three forms: powdered flakes, a liquid and a paste. The paste comes in a tube or jar; the liquid comes in a jar.

The paste can be spread on bread, the way you might Marmite or Vegemite.

It is particularly popular in the Romansch-speaking area of Switzerland.

The same company that makes Cenovis also makes stock cubes.

Cooking Tips

Cenovis can be added to soups, stocks, gravies, cooked dishes.

Nutrition

Being based on yeast, it’s high in vitamin B1. Contains no fat or sugar.

History Notes

Cenovis was invented in 1931 in Munich, Germany. Now (2007) it is practically unknown in Germany.

At the end of the 1930s, the recipe was bought by a Swiss brewer’s association.
