Criollo cheese is a pale yellow, semi-firm cheese made around Taxco, Guerrero in Mexico.
Cheeses named “Criollo” are also made in Peru, Argentina, Bolivia and many other countries.
In Bolivia, Queso Criollo is a low-fat cheese produced by Mennonites from raw milk.
