Niban Dashi Recipe
Niban Dashi is often used to simmer vegetables in.
- First, you must have made Hon Dashi. For this dashi, you re-use the same seaweed and tuna flakes as were used in the making of the Hon Dashi.
- Put in a pan the water, the used Kombu seaweed and the used tuna flakes.
- Bring the water to a boil, and let boil for 2 to 3 minutes. Strain the stock and discard the seaweed and the tuna flakes.
