Poussin is a French name used for a young chicken around four weeks old. In English, we would probably just say “spring chicken.” The meat of a poussin is very lean and so often recommended to weight-watchers trying to reduce fat intake. Poussins are usually about 1 pound (450 g) in size.
You will generally find these only at fancier butchers or gourmet stores. It is sometimes mistakenly said to be the same as Cornish Game Hen.
Cooking Tips
A one pound (450 g) bird cooked at 350 F (175 C ) will be done in about 30 to 35 minutes. Allow a 1 pound (450g) bird per person.
