Raidir

Raidir is a French verb that means “to stiffen.”

When referring to a heating process, to “Raidir” something could be to to stiffen just a bit the skin on a piece of chicken in a frying pan, but without any coloration allowed to happen at all.

You can also “raidir” (stiffen) vegetables by letting them sit in ice cold water.
