Romanesco Zucchini

Romanesco is an heirloom variety of zucchini.

It is small to mid-sized, with light ridges on its greyish-green striped skin that make slices of the zucchini look almost scalloped.

Harvest by the time the zucchini reach 8 to 10 inches (20 to 25 cm) long and 1 ½ inches (4 cm) wide.

Its large bush type plant can take up to about 6 square feet (.5 square metres.)

It produces many flowers that can be used for cooking. The flower remains for quite a while after its zucchini has started growing. Sometimes, the zucchini will start growing before the flower has even opened.

Romanesco F1 is a hybrid variety.

Cooking Tips

Romanesco has very tender skin and a taste that is almost nutty. It is good raw and cooked.

In restaurants, it is often fried up whole when very small and the flower is still attached.
