Ura Maki Sushi are a type of maki sushi that is made inside out.
To make them, a bamboo mat is covered with plastic wrap, a layer of rice is spread out on it, then a layer of nori seaweed put on.
The long sushi roll ends up with the rice on the outside of the slices; the seaweed in the middle.
It is garnished with sprinkles of sesame seeds, green seaweed flakes, or a fish roe such as that from smelts, then sliced into pieces for serving.
