Zywiecka Sausage

Zywiecka sausage is a style of sausage made in the southern Zywiec region of Poland; thus its name.

It is made from pork, a small amount of beef, and fat, and lightly seasoned with salt, pepper and garlic, then smoked.

A version of zywiecka called “chicken zywiecka” is now being made by the Konspol company in Poland. It is made from dark chicken meat that is seasoned, roasted, steamed, then dried.

Cooking Tips

Zywiecka can be considered already “cooked” and may be eaten in slices on sandwiches or on cold cut platters.

It can also be used in cooked dishes. It is, for instance, often used in making Hunter’s Stew (called “bigos” in Polish).

Zywiecka slices easily. Don’t forget to discard any plastic wrap around the slices.
