Brebis du Lochois is a soft sheep’s milk cheese made in Touraine, val de Loire, France.
It is round, about 7 cm wide and 3 cm tall (2 ¾ inches x about an inch), and weighs 120 g (about 4 oz.)
The curd is not pressed or cooked.
It is aged 2 to 3 weeks, and ends up with a greyish-blue rind with a mould on it.
This is a relatively recent cheese; previously the area had been known for its goat’s milk cheese.
