Broccoli Soup Recipe
Don't forget to peel and use the broccoli stalks as well as the florets.
Ingredients
- 1 Onion chopped
- 1 Potato peeled, chopped
- 4 cups Vegetable Stock
- 10 oz Broccoli chopped
Instructions
- Fry the onion and the potato in a bit of oil in a large saucepan for 4 minutes.
- Add the stock, and simmer for 10 minutes.
- Add the broccoli, and simmer for another 15 minutes.
- Whiz it all through a food processor or blender till smooth, then reheat and serve.
