Au Naturel

Au Naturel is a French word for food served simply, with no sauces, no seasoning and no added flavouring. Sometimes, it means even no cooking, in which case essentially it means “raw food.”

If the term is applied to a vegetable or fruit, it may have been washed and sliced.

History Notes

“Au naturel” was introduced into English cooking as a standard expression by the 1653 book, “The French Cook”, a translation of Francois Pierre de la Varenne’s 1651 book, “Le Cuisinier François.” In this recipe for beef or mutton, the only seasoning is salt, and the only side garnishes are parsley and perhaps some pieces of fried bread:

31. Pièce de boeuf & queue de mouton au naturel: Prenez une pièce de boeuf sortant de la boucherie, saupoudrez la d’un peu de sel, non par trop de peur d’avoir affaire du bouillon, faites la bien cuire, & levez ce qui aura esté salé comme les peaux: si vous voulez resalez la & poudrez de sel menu: servez avec persil autour ou pain frit & quelquefois de petits pastez, ou quelque liaison de ragoust. La queue de mouton au naturel se fait de mesme que la piece de bœuf, estant bien cuite ostez la peau, la poudrez de sel, & autour de persil, & la servez chaude. — Francois Pierre de la Varenne. Language Notes

When applied to people, “au naturel” means “naked.”
