Feta and Zucchini Fritters
A tasty way to use up zucchini. Excellent for freezing.
Ingredients
- 1 pound Zucchini grated
- 1 bunch Green Onions chopped
- ½ pound Feta Cheese crumbled
- 1 clove Garlic chopped
- 2 Eggs beaten
- ½ cup Flour
- ½ teaspoon Salt
- 4 tablespoons Olive Oil
Instructions
- Grate zucchini and drain and pat dry in paper towel.
- In a largish bowl, mix the zucchini with any herbs you want to use, the garlic, egg, flour and salt.
- Form in patties (about 15) and fry in the olive oil until golden.
Notes
Add some dried herbs, such as basil and parsley, to flavour.
