Fricot au Poulet

Fricot au Poulet is an Acadian stew made with chicken, potatoes, onion, water, salt, pepper and savoury, thickened with a small amount of flour. It is served in a bowl.

To make, you chop a chicken up into pieces, and brown the pieces in some fat in a large pot. Set the browned chicken pieces aside.

You then add minced onion to that pot and brown it, then mix in flour and cook a minute. Then you add in hot water, stir to get it to take up the flour, and season with the salt, pepper and savoury. Add the chicken back in, and cook for about 40 minutes. Add diced potato and cook for another 20 minutes, then serve.
