Green Flageolet Beans

Green Flageolet Beans are grown for use as a dried bean.

They have a very pale pastel green colour, and a creamy texture when cooked.

Cooking Tips

Simmer 1 hour; pressure-cook soaked beans for 15 to 20 minutes.

Substitutes

White Kidney Beans.

Equivalents

1 cup uncooked, dried = 2 ¼ cups, cooked.

History Notes

Green Flageolet Beans were developed in Brittany, France in the 1800s.
