Lamb Chump Chops are cut from the lamb chump end.You can get two per lamb.

They have a round bone in them. They have less bone than loin chops, and are larger and meater, but they are a bit less tender.

In compensation, they have good flavour.

They are the equivalent of rump steak in the beef world, but are far more tender.

Cooking Tips

Lamb Chump Chops are for for frying, baking, broiling (aka grilling in the UK) or grilling (aka BBQ outside the US.)

Cook 6 to 8 minutes, turning once half way through.

‘It is to be regretted that men of science do not interest themselves more than they do on a subject of such vast magnitude as [food]; for I feel confident that the food of a country might be increased at least one-third, if the culinary science was properly developed, instead of its being slighted as it is now.’ — Alexis Soyer (French chef. 4 February 1810 – 5 August 1858)
