They are a bit fatty, but that gives you flexibility in how you can cook them, and gives them great flavour to boot as the fat renders out.
They cook up fast.
Broil (aka grill in the UK) 8 to 10 minutes, turning once half way through.
Also good cubed for kebabs. When cooking them as kebabs, cook for 12 minutes, turning every 3 minutes.
Can also be slow cooked or used in stir fry.
