The sweet, tangy smell of fresh-pressed apple cider is one of the joys of the fall.
In the U.S. and Canada, the default meaning of apple cider is pressed, unfiltered, unsweetened and unfermented apple juice.
It has a flavour, aroma, body, tang, and complexity of and depth of flavour that the fermented version of apple cider loses.
This is sometimes called “soft”, “fresh” or “non-alcoholic” apple cider, to distinguish it from fermented, alcoholic cider.
