Lamb Saratoga Roll is a boneless, rolled up lamb cut from the centre area between the shoulder blades.
It contains a good deal of rib eye muscle, and a reasonable amount of marbling, so it is quite tender.
Small ones can weigh about 1 pound (450g) each; large ones 5 to 8 pounds (2 ½ to 3 ½ kg.)
Lamb Saratoga Chops can be cut from it.
