Molasses Pie is made in a pie crust with no top crust.
The filling is made from beaten eggs, molasses, sugar, butter, brown sugar and a few tablespoons of flour as a thickener.
Some recipes add a bit of baking soda. In most, the quantity of sugar is usually greater than that of molasses.
You mix the ingredients, pour in an unbaked pie shell, and bake. It needs about ½ hour baking time at 350 F (175 C.)
Fans of sorghum molasses swear that it makes a better, more complex tasting pie than when using sugar cane molasses.
Don’t use Blackstrap or Sulphured Molasses
Molasses Pie was made throughout America, particularly in the south.
