Pavé d’Isigny is a cheese made in Normandy, France from pasteurized cow’s milk, by the same cooperatives that make the d’Isigny butter.
The cheese is semi-firm with some small holes in it. It is made in a low, flat shape, with a washed-rind orange crust.
It is aged for 3 to 4 weeks.
Each cheese weighs about 2 ½ kg (5 ½ pounds).
