Purple Peruvian Potatoes

Purple Peruvian Potatoes are irregularly-shaped, knobbly, Fingerling potatoes, 2 inches (5 cm) long and ¾ inch (2 cm) wide.

They have glossy, thick, tough deep purple skin, and bright purple flesh.

The potatoes have some tolerance to frost. Sometimes Purple Peruvian Potatoes left in the ground will grow again the next spring.

These are floury potatoes.

Cooking Tips

Needs to be peeled.

Bake, mash or fry.

Colour diminishes in cooking.

Storage Hints

Stores well.
