Asiago is a northern Italian cheese made from cow’s milk. There are two versions, a traditional artisanal version used as you would Parmesan and a modern, industrial version used as you would use a cheddar.
Chevrot is a cheese made from goat’s milk. The cheese is sold either young or aged. Well-aged versions can be used as a grating cheese.
Washed-rind cheeses are firmer, lower-moisture cheeses whose rinds are washed, rubbed or brushed with, or dunked in liquid during maturation.
