Chevrot is a cheese made from goat’s milk. The cheese is sold either young or aged.

The young version has a mild flavour and is moist, with a bit of a yeasty taste. The rind, which is edible, is somewhat wrinkled and off white or ivory-coloured.

As it is aged, the interior starts to soften and the flavour becomes more pronounced. Chevrot cheeses in this category are generally aged for a minimum of 60 days.

Versions that are aged even longer will get hard enough that they can be used a grating cheese.

Chevrot is made by the Cooperative Sèvre-et-Belle in the village of Celles-sur-Belle near Poitou, France in the Loire Valley. The Sèvre-et-Belle Cooperative was started in 1893.
