À la Navarre

In Spanish, “A la Navarra” means “with tomatoes.” Navarre, a region of Spain, is the largest tomato-producing area in Spain.

A classic trout dish, “Truchas a la navarra” (“Navarre-style trout”) is a whole trout that is cleaned, stuffed with a slice of Spanish air-cured ham, floured, pan-fried and served on a bed of tomatoes and onions. (Often, it is served without the bed of tomatoes and onions, but still confusingly called “a la navarra”.)

“Chuleta(s) de cordero a la navarra” are lamb cutlets stewed in a sauce of tomatoes, onions and ham stewed in a sauce of tomatoes, onions and ham.
