Birch whisks are made of fine, stiff birch twigs bundled together. Sometimes the wood may be a wood other than birch.

The whisks are flexible, and thus good for light sauces, such as béchamel or gravy.

They won’t scratch non-stick pots and pans.

They are not good for heavier work, and obviously, they are not dishwasher-safe.
