Butterscotch Beans Recipe
- Simmer lima beans in unsalted water until tender -- about 1 1/2 to 2 hours. Or, 15 minutes in a pressure cooker.
- Start your oven heating.
- Drain the beans, put into a large bowl, stir in all the remaining ingredients.
- Transfer to an ovenproof dish. Put in heated oven, bake for an hour / hour and a half.
- Serve hot.
Makes 2 kilos / 8 cups. 5 Weight Watchers PointsPlus® per 1/2 cup. (Using a light sour cream really doesn’t help much, as most of the points come from the butter and brown sugar, without which there would be no butterscotch flavour.)
