Cranberry Relish Recipe
Use as a garnish for meat. Serve it cold.
- Heat oil in a saucepan and cook the onion until soft but not brown. Add garlic and chiles (optional) and cook for 3 to 4 more minutes.
- Add sugar and cranberries and cook until cranberries start to soften, then add the orange zest and juice and thyme and simmer for 10 minutes.
- Stir in the beet, heat, add the vinegar, and salt, pepper and more sugar to taste. If too thick, thin with a few tablespoons of water. Allow to cool.
