Cranberry Relish Recipe

Cranberry Relish Recipe

Use as a garnish for meat. Serve it cold.

Ingredients
  

  • 1 Red Onion large, sliced thinly
  • 2 tablespoons Oil
  • 1 clove Garlic chopped
  • pinch Chiles crushed, dried
  • ½ cup Cranberries
  • 3 tablespoons Brown Sugar
  • 1 teaspoon Orange Zest
  • 1 Orange juiced
  • ½ teaspoon Thyme ground
  • 1 cup Beetroot cooked, chopped finely
  • 2 teaspoons Balsamic Vinegar

Instructions
 

  • Heat oil in a saucepan and cook the onion until soft but not brown. Add garlic and chiles (optional) and cook for 3 to 4 more minutes.
  • Add sugar and cranberries and cook until cranberries start to soften, then add the orange zest and juice and thyme and simmer for 10 minutes.
  • Stir in the beet, heat, add the vinegar, and salt, pepper and more sugar to taste. If too thick, thin with a few tablespoons of water. Allow to cool.
