Lemon and Anchovy Dressing Recipe
This is a creamy dressing with a very light lemony taste and texture -- very refreshing in the summer. And it's also incredibly light on your waist line, coming in at just 26 calories per tablespoon. Compare that to most other creamy salad dressings which clock in at 60 to 80 calories per tablespoon. Yield: 150 ml (⅔ cup / 5 oz)

Instructions
- Drain the anchovies.
- Either place all the ingredients in a blender or food processor and whiz them until combined --
- OR
- Mash the anchovies, mustard and garlic in a bowl with a fork. Mix in the salad dressing base, lemon zest, Greek yoghurt and lemon juice.
- After either method, season to taste with pepper. You probably will not need any salt.
Notes
Instead of 6 fillets of anchovies, you can use 1 tablespoon anchovy paste or 1 ½ tablespoon capers (rinsed.)
