Mustardy Roast Potatoes

While new potatoes are in season, this is a great way to enjoy them.

Ingredients
  

  • 2 pounds New Potatoes
  • 4 tablespoons Olive Oil
  • 2 tablespoons Dijon Mustard

Instructions
 

  • Wash the potatoes, no need to peel.
  • In a large bowl, mix the oil and the mustard, then toss the potatoes in them to coat.
  • 40 minutes before whatever meat you are cooking is done, remove the meat from the oven, dump the potatoes around the meat, then place meat back in oven and roast for another 40 minutes.
