Red Berry Clafoutis Recipe

Red Berry Clafoutis Recipe

Use red berries such as raspberries, strawberries, red currants, etc. Come to think of it, there's actually no reason the berries have to be red, but a mixture of at least two is nice.

Ingredients
  

  • 1 cup Flour
  • 3 Eggs
  • 1 cup Milk
  • ⅓ cup Sugar
  • 1 teaspoon Vanilla
  • 2 tablespoons Butter
  • ½ pound Berries

Instructions
 

  • Start heating your oven to 200 C / 400 F / Gas Mark 6.
  • Wash and prepare the berries.
  • Mix in a bowl half the milk and the eggs, then add the flour. When it's a thick, relatively smooth batter, add the sugar, vanilla and the remaining milk.
  • Put the butter in an ovenproof dish, and put it in the oven to heat the dish until the butter is melted. Remove from the oven, and pour the batter in right away, then sprinkle the fruit over top. Bake for 30 to 40 minutes. Remove from oven. Leave in dish, and sprinkle with a bit of sugar.

Notes

Use a wide, shallow ovenproof dish about 9 x 2 inch (23 x 5 cm).
