Though basically a Saddle of Turkey can be whatever the butcher decides to call it, some generalizations are possible. A Turkey Saddle is a boneless version of a Turkey Crown. A full saddle will have both breasts and weigh usually 6 to 13 pounds (3 kg to 6 kg.) If it has bones in it, then it’s actually a Turkey Crown.
Some variations can include some thigh meat. The saddle may come with skin on or off. Some can come already cooked and or smoked.
It’s called a saddle because with two large, floppy, boneless pieces of breast meat attached to each other at the top, it looks reminiscent of a saddle you would put on a horse.
Saddle of Turkey is very different from a “Turkey Saddle.” A Turkey Saddle is a jacket put on female turkeys during breeding to protect their backs from the claws of male turkeys. If you see “Saddle of Turkey” offered for sale as “Turkey Saddle”, be very sure of what you are buying as you may be hard-pressed to find a use for a Turkey mating jacket.
