Muenster is a washed-rind, semi-firm cheese with a red sticky rind. European versions are very smelly; American versions are milder and less aromatic.

Pont-l’Evêque is square cheese with a white mould rind that has orangish-brown patches on it. Inside, the cheese is soft and pale yellow with a fine texture. The cheese is quite whiffy.

St-Nectaire cheese is a round, flat, semi-firm cheese with a soft, milky taste. The rind is edible, though it can be gritty.

Taleggio cheese has a taste ranging from milk to sharp depending on age. The edible rind is strong tasting. Inside, the cheese is semi-firm, becoming runny as it ages.
