Tapioca pearls (aka pearl tapioca) are typically used to make tapioca pudding or thicken pies.
The white beads / granules are larger than those of instant tapioca, and must be soaked for about 15 minutes before using.
When used to thicken a fruit pie, a recipe will generally have you combine it with the fruit and sugar and let sit.
It will become soft and transparent after being cooked.
