A bottom round steak (aka “outside round steak”) is a beef steak cut from a bottom round pot roast.

It is a tougher cut of meat, not suitable for grilling.

But, it is very flavourful meat, and often inexpensive compared to other cuts, so it can be worth adding knowledge of how to cook with it to your repertoire.

Cooking Tips

You can use long, slow cooking with moist heat — in a slow cooker for instance, with braising liquid or sauce added.

You can also cube the meat for stewing beef, grind for extra-lean ground beef, slice very thinly for stir-fry, etc.

Other names

AKA: Outside Round Steak, Western Griller
