Port and Stilton Pâté

Port and Stilton Pâté

A dead easy but great tasting pâté for the winter months.

Course Spreads and Pâtés, Starters

Ingredients
  

  • 2 oz Butter
  • 1 bunch Green Onions minced
  • 2 oz Port
  • ½ Lemon zested
  • 4 oz Stilton
  • 1 bunch Parsley small, fresh, minced

Instructions
 

  • Melt butter in a saucepan over low heat. Add green onions, cook slowly until they are soft. Do not brown. Add port, let simmer for 3 minutes, stirring occasionally.
  • Add remaining ingredients, stir, and whiz in a blender until smooth. Adjust seasoning.
  • Put into either small ramekins for individual servings or a large dish. Chill for at least 2 hours.
  • Serve with crackers of your choice.
